Raw Snickers Slice

A nutty macadamia, almond crust paired with gooey medjool date caramel filling and raw chocolate coating.

All raw… dairy free, grain free, gluten free, guilt free slice (which tastes more satisfying than a snickers bar btw).

Prep time: 50 minutes
Yields: 16 serves

Ingredients:
Crust:

  • 1 cup raw macadamia nuts
  • 1 cup raw almonds
  • 1 cup medjool dates (soaked for 20 minutes)

Caramel Goo:

  • 1 cup medjool dates (soaked for 20 minutes)
  • 2 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup water
  • pinch of himalayan salt (NAS for MD/CHD sufferers)

Chocolate Coating:

  • 1/2 cup maple syrup (or raw local honey like I used)
  • 3/4 cup raw cacao
  • 1/3 cup coconut oil
  • 1/4 cup water, added slowly

Directions:
Crust:

  1. In a food processor, whirl the nuts and dates until combined.
  2. Spoon into a square dish lined with parchment paper and press down until evenly spread. Set aside

Caramel Goo:

  1. Blend all ingredients in a food processor until smooth, adding water slowly as needed.
  2. Pour the batter on top of the base and place in the freezer while you work on the chocolate layer.
  3. Note: Add chopped almonds on top if you want the crunchy snickers feel.

Chocolate Coating:

  1. Blend all ingredients in a food processor until smooth, adding water slowly as needed (don’t over water).
  2. Spread on top of the caramel layer (over the nuts, if added) and put back into the freezer for an hour (or so) until set.
  3. When you can’t take it anymore, take out of the freezer and cut into small bite-sized pieces.
